Banana Coconut Rice Pudding
Ingredients
- 2 cups cooked rice
- 13.5 oz can coconut cream + 1 can water
- ⅓ cup sugar
- ¼ tsp salt
- 1 banana, mashed
- 1 tsp vanilla extract
- 1 tsp Cocoa Chai Comfort
Method
Heat rice, coconut cream, water, sugar, and salt in a saucepan. Bring to a simmer for 5+ minutes until creamy. In a bowl, mash banana with vanilla and Cocoa Chai Comfort. Stir all ingredients together and refrigerate. Enjoy!

Cocoa Chai Granola
Ingredients
- 4 cups rolled oats
- ¾ cup shredded coconut
- ½ cup chopped pecans
- ¼ cup sesame seeds · ¼ cup pumpkin seeds · ⅓ cup sunflower seeds
- ¼ tsp salt
- 3 tsp Cocoa Chai Comfort
- 1 tsp cinnamon & turmeric (optional)
- ¼ cup honey · ¼ cup maple syrup · 3 tbsp butter (melted together)
- Dried raisins, cranberries, cherries — to taste
Method
Combine all dry ingredients. Melt honey, maple syrup, and butter together, then pour over the dry mix and stir well. Spread onto a large baking pan and bake at 350 °F for approximately 25 minutes. Stir in dried fruit once cooled.

Sensational Red Sangria
Ingredients
- 2 cups pineapple juice
- 3 cups Cabernet Sauvignon
- ¼ cup cherry liquor
- 2 tbsp Cocoa Chai Simple Syrup
- ¾ tsp Cocoa Chai Comfort
- 3 tangerines, sliced · 1 apple, sliced
Method
Combine all ingredients, refrigerate overnight. Serve in large glasses garnished with fresh cherries.

Mocktail · Serves 4
Raspberry Kiss Mocktail
Ingredients
- 1 cup raspberries
- 1½ cups coconut water
- 1 tsp Cocoa Chai Comfort
- Cream soda, to top
- Lime slices, to garnish
Method
Blend raspberries, coconut water, and Cocoa Chai Comfort until smooth. Fill 4 glasses with ice and pour the blend evenly. Top gently with cream soda and garnish with a slice of lime. Enjoy!

Carol's Chocolate Chip Cookies
Ingredients
- 1 cup shortening
- 1½ cup brown sugar · ¾ cup sugar
- 4 eggs
- 1 tbsp vanilla extract
- 3 cups flour
- 2 tsp Cocoa Chai Comfort
- 1½ tsp baking soda · 1½ tsp salt
- 2 cups semi-sweet chocolate chips
Method
Combine everything thoroughly. Scoop 2″ balls onto a cookie sheet. Bake at 350 °F for 10–12 minutes.

Boffo Brownies
Ingredients
- 1 × 15 oz can black beans
- ¼ cup oil
- ¼ cup cocoa powder
- 3 tbsp warm coffee (added to cocoa)
- 1 tbsp vanilla extract
- ⅔ cup sugar
- 4 eggs
- 2 tsp Cocoa Chai Comfort
- ¾ cup chocolate chips
Method
Add all ingredients (except chocolate chips) to a food processor and blend until smooth. Fold in chocolate chips. Pour into a greased 8×8 pan and bake at 350 °F for 25 minutes.

Coconut Breakfast Buns
Dough Ingredients
- 1 × 13.5 oz can coconut cream · 4 cups water · 1 cup sugar · 1 cup oil
- 2 tbsp yeast
- 8 cups flour (initial) + 1 cup flour (added after rise)
- 2 tsp baking soda · 1 tbsp salt
- Filling: 4 tsp Cocoa Chai Comfort · 1 tsp cinnamon · ½ cup sugar · oil
Glaze
- 1 cup powdered sugar
- 3 tbsp coconut cream
- 1 tsp vanilla extract
Method
Heat coconut cream, water, sugar, and oil to almost simmering. Let cool ~25 minutes, then stir in yeast and 8 cups flour. Let rise 1 hour. Add remaining flour, baking soda, and salt. Roll dough out on a floured surface. Spread oil over dough and sprinkle filling mix. Roll tightly, slice into 2″ rolls. Place in a greased baking dish, let rise ~1 hour. Bake at 375 °F for 45 minutes. Drizzle glaze immediately while hot.

Spicy Nice Cocoa Chai Cookies
Ingredients
- ¾ cup butter · 1 cup sugar · 2 eggs · ½ cup molasses
- 2 tsp vanilla extract
- 4 tsp Cocoa Chai Comfort
- 2 cups flour · 1½ tsp baking soda · ½ tsp baking powder · ½ tsp salt
- 1½ cups raisins
Method
Mix all ingredients until a soft dough forms. Place 2″ balls on a cookie sheet and bake at 350 °F for 10 minutes.
